Maverick Texas Brasserie is part of the Maverick Restaurant Group and led by President Peter Selig, the visionary restaurateur behind local icons like Biga and Ácenar. With Maverick, Peter continues shaping the San Antonio dining scene by bringing big-city flavors to Southtown in an approachable, down-to-earth setting.

In the kitchen, Chef Ed Ebert and his team showcase their passion for French cuisine with fearless Texas flair. The result is a menu full of rustic French classics with bold regional twists. And yes, we proudly serve the city’s best pork schnitzel.

Hospitality is the heartbeat of Maverick. General Manager Brannon Swindle and his team ensure every guest experience is warm, welcoming, and deeply rooted in Texas charm.

Executive Chef

Edward Ebert

With a career that spans world-class fine dining, high-volume sports venues, and retail culinary innovation, Chef Edward Ebert brings refined technique and bold creativity to Maverick’s kitchen. His fine dining foundation was shaped at The Little Nell Hotel in Aspen, Colorado, which he describes as the pinnacle of his culinary training.

For nearly a decade, Ed served as Corporate Executive Chef with RS3 Strategic Hospitality, overseeing culinary operations across major sports and entertainment facilities in Round Rock, Sacramento, Pensacola, and at the F1 track at the Circuit of the Americas. His time in these high-energy environments sharpened both his operational expertise and his ability to deliver exceptional experiences at scale.

Chef Ed also served as Executive Chef for Central Market and played a key role in developing the HEB Plus concept, combining culinary vision with large-scale retail strategy. At Maverick, he draws on this diverse background to craft menus that showcase wood-fired cooking, French-Texas flavors, and a commitment to making everything from scratch. His seasonal and European-inspired dishes reflect a dedication to quality, creativity, and hospitality that is rooted in decades of hands-on experience.

General Manager

Brannon Swindle

With more than 30 years in the food and beverage industry, Brannon Swindle brings seasoned leadership and genuine hospitality to Maverick Texas Brasserie. For over five years, he has served as General Manager and Director of Operations, guiding both front-of-house and back-of-house teams at Maverick and sister properties. His work includes driving sales strategy, supporting menu development, rebuilding staff in the wake of COVID, and leading private event operations and marketing efforts.

Brannon’s career path includes leadership roles at Cured Restaurant, The Granary, and Ruth’s Chris Steak House, where he refined his expertise in hospitality, team training, and guest experience in high-volume fine dining. Earlier in his career, he also contributed to concept development for The Granary, including launching its cocktail program and weekend brunch.

His leadership style blends operational precision with a warm, approachable demeanor. Brannon’s deep industry knowledge and commitment to service ensure every guest leaves Maverick feeling welcome, cared for, and eager to return.
