Maverick Texas Brasserie proudly participates in the Culinary Institute of America’s CIA Externship Program, offering students the opportunity to complete their 550-hour professional training in one of San Antonio’s most dynamic kitchens. Whether you’re joining us through the externship or as a new team member, Maverick offers a rare chance to work in a fully scratch kitchen guided by seasoned professionals.
Under the leadership of Executive Chef Ed Ebert, whose background spans high-volume stadiums, fine-dining hotels, and concept development across Texas, team members are immersed in every stage of the culinary process in a from-scratch kitchen. From butchering proteins to building sauces, baking bread, and plating refined entrees, you’ll gain hands-on experience in a kitchen where nothing comes pre-made and everything is earned through technique.
The menu highlights both French fundamentals and dishes inspired by the broader culinary traditions of Europe. You’ll work with seasonal produce, heritage meats, and premium ingredients to craft wood-fired specialties, daily rotating prix fixe meals, and a range of fine dining ingredients.
